Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.25 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 tablespoon honey
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 cups baby spinach
  • 2 cups grape tomatoes, halved
  • 0.25 cup parmesan cheese, shredded

Directions

Step 1

Season the chicken breasts with salt, black pepper, and Italian seasoning on both sides.

Step 2

In a small bowl, whisk together the balsamic vinegar, honey, and 1 tablespoon of olive oil. Set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes per side until golden brown. Remove chicken from the skillet and set aside.

Lower the heat to medium and add the minced garlic to the skillet. Sauté for 1 minute until fragrant.
