Ingredients

  • 4 Red onions
  • 500 g Baby potatoes
  • 3 tbsp Olive oil
  • 2 tbsp Balsamic vinegar
  • 2 sprigs Fresh rosemary
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 3 Garlic cloves

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Peel the red onions and cut them into quarters. Halve any larger baby potatoes to ensure even cooking.

Step 3

Place the onions and potatoes into a large roasting tray, making sure they are spread out in a single layer.

Step 4

Drizzle the olive oil and balsamic vinegar over the vegetables. Toss gently to coat everything evenly.

Step 5

Scatter the fresh rosemary sprigs over the tray. Lightly smash the garlic cloves (leave the skins on) and add them to the tray for extra aroma.

Step 6

Season the vegetables with salt and black pepper, adjusting to taste.

Step 7

Roast in the preheated oven for 45-50 minutes, stirring halfway through to ensure even caramelization.

Step 8

Once the onions and potatoes are tender and golden, remove from the oven. Discard the rosemary sprigs if desired.

Step 9

Serve the balsamic baked onions and potatoes hot as a side dish to complement roasted meats, fish, or even a hearty vegetarian main.
