  • 2 pieces Filet mignon steaks
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 ounces Goat cheese
  • 0.5 cup Balsamic vinegar
  • 2 tablespoons Brown sugar
  • 1 teaspoon Fresh thyme (optional, for garnish)

Directions

Step 1

Remove the filet mignon from the refrigerator 30 minutes before cooking to bring it to room temperature. Pat the steaks dry with a paper towel.

Step 2

Season both sides of the filet mignon generously with salt and black pepper.

Step 3

Heat a large cast-iron skillet over medium-high heat. Add 2 tablespoons of olive oil and allow it to shimmer.

Step 4

Sear the filet mignon steaks in the hot skillet for 3-4 minutes per side to achieve a nice crust. Use tongs to sear the edges as well, about 30 seconds per edge.

Reduce the heat to medium-low and continue cooking the steaks for an additional 4-6 minutes, depending on your desired doneness (120°F for rare, 130°F for medium-rare, 140°F for medium). Use an instant-read thermometer to check the internal temperature.
