Ingredients

  • 6 large eggs
  • 2 tablespoons milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces breakfast sausage links
  • 0.5 medium, diced yellow onion
  • 0.5 medium, diced green bell pepper
  • 0.75 cup, shredded cheddar cheese
  • 1 tablespoon unsalted butter

Directions

Step 1

Crack the eggs into a medium bowl. Add the milk, salt, and black pepper, and whisk until well combined. Set aside.

Step 2

Heat a large nonstick skillet over medium heat. Add the breakfast sausage links and cook, turning occasionally, until browned and cooked through, about 6-8 minutes. Remove them from the skillet and let cool slightly before slicing into bite-sized pieces.

In the same skillet, melt the butter over medium heat. Add the diced onion and green bell pepper and sauté until softened, about 4-5 minutes.
