Ingredients

  • 1 cup dry red lentils
  • 1 cup all-purpose flour
  • 0.5 cup rolled oats
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup dark chocolate chips
  • 0.25 cup chopped walnuts (optional)

Directions

Step 1

Rinse and cook the red lentils in a saucepan with 2 cups of water over medium heat until soft, about 10-12 minutes. Drain excess water and allow the cooked lentils to cool completely.

Step 2

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 3

In a medium mixing bowl, whisk together the flour, rolled oats, baking powder, baking soda, ground cinnamon, and salt. Set aside.

Step 4

In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Step 5

Add the egg and vanilla extract to the butter mixture, and beat until fully incorporated.

Step 6

Fold in the cooled lentils using a spatula, ensuring they are evenly distributed in the wet mixture.

Step 7

Gradually add the dry flour mixture to the wet mixture, stirring until just combined. Do not overmix.

Step 8

Gently fold in the dark chocolate chips and walnuts (if using).

Step 9

Scoop 1.5 tablespoons of dough for each cookie and place them onto the prepared baking sheet, spacing them about 2 inches apart.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set.

Step 11

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 12

Enjoy your nutrient-rich Bal S Lentil Cookies with a glass of milk or a cup of tea!
