Ingredients

  • 150 grams all-purpose flour
  • 50 grams rice flour
  • 1 medium, julienned carrot
  • 100 grams, shredded cabbage
  • 100 grams bean sprouts
  • 2 stalks, sliced scallions
  • 100 grams corn kernels
  • 2 cloves, minced garlic
  • 200 ml water
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper
  • 500 ml, for frying vegetable oil

Directions

Step 1

In a large mixing bowl, combine all-purpose flour, rice flour, and water. Whisk until smooth to make a batter.

Step 2

Add the egg to the batter and mix until well incorporated. Season with salt and white pepper.

Step 3

Stir in the minced garlic, julienned carrot, shredded cabbage, bean sprouts, sliced scallions, and corn kernels. Mix well to ensure all the vegetables are evenly coated with the batter.

Step 4

Heat vegetable oil in a deep frying pan over medium heat. You will need enough oil to submerge the fritters halfway.

Step 5

Scoop about 2 tablespoons of the vegetable mixture and carefully pour into the hot oil. Flatten slightly with the back of the spoon.

Step 6

Fry each side for about 3-4 minutes or until golden brown and crispy. Make sure not to overcrowd the pan to maintain the oil temperature.

Step 7

Remove the fritters with a slotted spoon and let them drain on a plate lined with paper towels to absorb the excess oil.

Step 8

Serve hot with your choice of dipping sauce like sweet chili sauce or peanut sauce.
