Ingredients

  • 500 grams ground beef
  • 100 grams tapioca flour
  • 5 tablespoons ice cold water
  • 4 cloves garlic, minced
  • 1.5 teaspoons salt
  • 1 teaspoon white pepper
  • 1 teaspoon baking powder
  • 500 grams beef bones
  • 2 liters water
  • 4 shallots, thinly sliced
  • 3 tablespoons vegetable oil
  • 200 grams cooked thin egg noodles
  • 100 grams bean sprouts
  • 2 tablespoons chopped spring onions
  • 2 tablespoons fried shallots

Directions

Step 1

In a bowl, combine the ground beef, tapioca flour, minced garlic, salt, white pepper, and baking powder. Gradually add cold water while mixing, until the mixture is smooth and well-blended.

Step 2

Bring a pot of water to a gentle boil. Using wet hands, form meatballs from the beef mixture, roughly the size of a ping-pong ball. Drop the meatballs into the boiling water.

Step 3

Once the meatballs rise to the surface, cook for an additional 5 minutes before removing them from the water with a slotted spoon. Set aside.

Step 4

To prepare the broth, add beef bones to a large pot with 2 liters of water. Bring to a boil, then reduce the heat and simmer for about 45 minutes, skimming off any foam for a clear broth.

Step 5

In a small pan, heat vegetable oil over medium heat. Fry the thinly sliced shallots until crispy and golden. Drain on paper towels and set aside.

Step 6

Strain the beef broth to remove the bones, returning the clear broth to the pot. Add the cooked meatballs to the broth and heat through.

Step 7

To serve, place a portion of cooked egg noodles in each bowl. Add some bean sprouts, then ladle the hot broth and meatballs over the noodles.

Step 8

Garnish with chopped spring onions and fried shallots before serving. Enjoy your warm, comforting bowl of Bakso Sapi.
