  • 1 tablespoon Fresh parsley (chopped)
  • 2 tablespoons Celery (finely diced)
  • 1 tablespoon Red onion (finely diced)
  • 1 cup Baby spinach leaves
  • 1 medium Tomato (sliced)
  • 4 slices Whole grain sandwich bread
  • 1 tablespoon Butter

Directions

Step 1

Open the can of albacore tuna, drain the water, and transfer the tuna to a medium-sized mixing bowl.

Step 2

Add mayonnaise, Dijon mustard, lemon juice, salt, and ground black pepper to the bowl. Mix well to combine.

Fold in chopped parsley, diced celery, and diced red onion to the tuna mixture. Stir until evenly distributed.
