Ingredients

  • 6 cups (sliced) cucumber (pickling variety)
  • 2 cups (sliced) onion
  • 2 tablespoons kosher salt
  • 4 cups ice cubes
  • 2.5 cups granulated sugar
  • 2.5 cups white vinegar
  • 1 tablespoon yellow mustard seeds
  • 0.5 teaspoon celery seeds
  • 0.5 teaspoon ground turmeric
  • 8 pieces whole cloves

Directions

Step 1

Wash and slice the cucumbers into 1/4-inch thick rounds. Peel and thinly slice the onions.

Step 2

In a large bowl, combine the cucumber slices, onion slices, and kosher salt. Stir to mix evenly.

Step 3

Top the mixture with ice cubes, cover the bowl, and let it sit for 3 hours to draw out excess moisture from the cucumbers.

Step 4

After 3 hours, drain the cucumber and onion slices well, and remove any remaining ice.

Step 5

In a large saucepan, combine granulated sugar, white vinegar, mustard seeds, celery seeds, turmeric, and whole cloves. Stir over medium heat until the sugar is completely dissolved and the mixture comes to a light boil.

Step 6

Add the drained cucumbers and onions to the pot. Simmer for 5 minutes, ensuring the pickles are evenly coated in the brine.

Step 7

Remove the pan from heat and let the mixture cool slightly.

Step 8

Pack the pickles and brine into sterilized jars, ensuring there is enough brine to fully submerge the pickles.

Step 9

Seal the jars tightly. Allow them to cool to room temperature before transferring to the refrigerator.

Step 10

For best flavor, let the pickles sit in the refrigerator for at least 24 hours before serving. Store in the refrigerator for up to 3 months.
