Ingredients

  • 500 ml Whole milk
  • 100 g Granulated sugar
  • 4 pieces Egg yolks
  • 30 g Cornstarch
  • 50 g Unsalted butter (cold and cubed)
  • 2 tsp Pure vanilla extract

Directions

Step 1

In a medium saucepan, heat the milk over medium heat until it starts to steam but does not boil.

Step 2

While the milk is heating, in a mixing bowl, whisk together the sugar, egg yolks, and cornstarch until smooth and pale yellow.

Step 3

Once the milk is hot, gradually pour about 1/3 of the milk into the egg mixture, whisking constantly to temper the eggs and prevent curdling.

Step 4

Pour the tempered egg mixture back into the saucepan with the rest of the milk, continuing to whisk constantly over medium heat.

Step 5

Cook the mixture until it thickens and begins to bubble, about 2-3 minutes. Reduce heat to low and cook for an additional minute.

Step 6

Remove the saucepan from the heat and immediately whisk in the cold butter and vanilla extract until fully incorporated and smooth.

Step 7

Strain the pastry cream through a fine-mesh sieve into a clean bowl to remove any lumps, if necessary.

Step 8

Press a piece of plastic wrap directly onto the surface of the pastry cream to prevent a skin from forming, and let it cool to room temperature.

Step 9

Once cooled, refrigerate for at least 2 hours before using. Stir gently before using in desserts.
