Ingredients

  • 2 medium Eggplant
  • 2 tablespoons Za'atar
  • 1 cup Breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 0.5 cup All-purpose flour
  • 2 Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Olive oil spray
  • 0.25 cup Tahini
  • 2 tablespoons Lemon juice
  • 1 Garlic clove, minced
  • 3 tablespoons Water
  • 0.25 teaspoon Cayenne pepper (optional)

Directions

Step 1

Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Cut the eggplants into thin fry-like sticks, about 3 inches long and 1/2 inch thick.

Step 3

Prepare a breading station with three shallow bowls: one with flour, one with whisked eggs, and one with breadcrumbs, za'atar, grated Parmesan, salt, and black pepper mixed together.
