Ingredients

  • 1 large Sweet potato
  • 1 medium Zucchini
  • 1 medium Beetroot
  • 1 large Carrot
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Paprika (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two large baking sheets with parchment paper.

Step 2

Wash and thoroughly dry all the vegetables. Use a mandoline slicer to thinly slice the sweet potato, zucchini, beetroot, and carrot into uniform slices. Aim for slices about 1/8-inch thick to ensure even cooking.

Step 3

Place the sliced veggies into a large mixing bowl. Drizzle olive oil over the slices and gently toss until all slices are lightly coated.

Step 4

In a small bowl, mix together the salt, black pepper, garlic powder, and paprika (if using). Sprinkle the seasoning mixture evenly over the vegetable slices and toss to distribute.
