Ingredients

  • 16 oz Cheese tortellini (fresh or frozen)
  • 2 tbsp Extra virgin olive oil
  • 4 Garlic cloves, minced
  • 14 oz Canned whole clams (with their juice)
  • 1 cup Dry white wine
  • 1 cup Crushed tomatoes
  • 0.5 cup Heavy cream
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Grated Parmesan cheese
  • 1.5 cups Shredded mozzarella cheese
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with olive oil or non-stick spray.

Step 2

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions until al dente. Drain and set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Step 4

Add the canned clams with their juice and the dry white wine to the skillet. Bring to a simmer and cook for 3-4 minutes to allow some of the liquid to reduce.

Step 5

Stir in the crushed tomatoes, heavy cream, red pepper flakes, salt, and black pepper. Simmer for another 5-7 minutes to allow the flavors to meld together.

Step 6

Remove the skillet from the heat and carefully stir the cooked tortellini into the sauce until evenly coated.

Step 7

Pour the tortellini and sauce mixture into the prepared baking dish, spreading it out evenly.

Step 8

Sprinkle the grated Parmesan cheese over the top, followed by the shredded mozzarella cheese.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and slightly golden on top.

Step 10

Remove from the oven and let the dish rest for 5 minutes before serving. Garnish with freshly chopped parsley, if desired.

Step 11

Serve warm and enjoy your baked tortellini with red and white clam sauce!
