Ingredients

  • 4 pieces medium ripe tomatoes
  • 1 cup pitted Kalamata olives
  • 2 tablespoons extra virgin olive oil
  • 2 cloves minced garlic
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 0.33 cup panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with olive oil.

Step 2

Wash and dry the tomatoes. Slice the tops off each tomato and scoop out the seeds and pulp using a spoon, creating a hollow space inside. Be careful not to break the tomato walls.

Step 3

Place the hollowed-out tomatoes in the prepared baking dish, cut side up.

Step 4

In a mixing bowl, combine the pitted Kalamata olives, minced garlic, chopped parsley, chopped basil, panko breadcrumbs, grated Parmesan cheese, salt, black pepper, and 1 tablespoon of olive oil. Mix until fully combined.

Step 5

Spoon the olive mixture into each hollowed tomato, pressing gently to ensure it's packed in evenly.

Step 6

Drizzle the remaining 1 tablespoon of olive oil over the stuffed tomatoes for added flavor and moisture.

Step 7

Bake the tomatoes in the preheated oven for 18-20 minutes, or until the tomatoes are soft and the topping is golden brown and slightly crispy.

Step 8

Remove from the oven and let cool for a few minutes before serving. Garnish with extra fresh basil or parsley if desired.

Step 9

Serve warm as an appetizer, side dish, or light vegetarian main course.
