Ingredients

  • 4 pieces Large ripe tomatoes
  • 3 tablespoons Fresh parsley, chopped
  • 2 teaspoons Fresh thyme leaves
  • 3 cloves Garlic, minced
  • 3 tablespoons Olive oil
  • 1 cup Breadcrumbs
  • 2 tablespoons Grated Parmesan cheese (optional)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the tomatoes and cut them in half horizontally. Use a small spoon to gently scoop out the seeds, creating a small cavity in each half.

Step 3

Lightly salt the inside of the tomatoes and place them cut-side down on a paper towel to draw out excess moisture while you prepare the filling.

In a medium bowl, combine the chopped parsley, thyme leaves, minced garlic, breadcrumbs, grated Parmesan (if using), salt, and black pepper.
