Ingredients

  • 4 Large tomatoes
  • 1 cup Orzo pasta
  • 2 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 1 cup Fresh basil leaves, chopped
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.25 cup Bread crumbs (optional)
  • 2 cups Water or broth

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the tops off the tomatoes and use a spoon to carefully scoop out the insides, creating hollow shells. Reserve the tomato pulp and juice in a bowl.

Step 3

Cook the orzo pasta according to the package instructions, using water or broth to add flavor. Once cooked, drain and set aside.

Step 4

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Stir in the reserved tomato pulp and juice, cooking for 2-3 minutes to reduce slightly.

Add the cooked orzo, chopped basil, grated parmesan cheese, salt, and black pepper to the skillet. Mix until well combined.
