Ingredients

  • 4 large ripe tomatoes
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 ounce cream cheese
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the tomatoes and cut off the tops. Scoop out the seeds and pulp with a spoon to create a hollow center. Be careful not to puncture the sides. Set the hollowed tomatoes upside down on a paper towel to drain.

Step 3

Bring a pot of water to boil and blanch the broccoli florets for 2 minutes until they are bright green and tender. Drain and finely chop the broccoli.
