Ingredients

  • 750 grams Cherry tomatoes
  • 5 units Garlic cloves
  • 3 tablespoons Extra virgin olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 10 leaves Fresh basil leaves
  • 50 grams Grated Parmesan cheese
  • 400 grams Dried pasta (spaghetti, penne, or your choice)
  • 4 liters Water

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and pat dry the cherry tomatoes, then transfer them to a medium-sized baking dish.

Step 3

Peel the garlic cloves and crush them lightly using the flat side of a knife. Add them to the baking dish with the tomatoes.

Step 4

Drizzle the tomatoes and garlic with extra virgin olive oil. Sprinkle with salt, black pepper, and crushed red pepper flakes if using.

Toss everything together to evenly coat the tomatoes and garlic with oil and seasonings.

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the tomatoes are bursting and slightly caramelized.

While the tomatoes are baking, bring a large pot of water to a boil. Add 1 teaspoon of salt, then cook the dried pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water before draining.

Serve immediately, garnished with additional Parmesan cheese and fresh basil leaves, if desired.
