  • 4 large sweet potatoes
  • 2 medium russet potatoes

  • 0.25 cup grated Parmesan cheese
  • 0.5 cup panko breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 2-quart baking dish.

Peel and cut the sweet potatoes and russet potatoes into evenly sized chunks.

Place the potato chunks in a large pot of cold, salted water. Bring the water to a boil over medium-high heat, then reduce the heat to medium and cook for 15-20 minutes, or until the potatoes are fork-tender.
