Ingredients

  • 4 pieces large tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Wash the tomatoes and cut off the tops; set the tops aside. Scoop out the pulp and seeds using a spoon, leaving a hollow shell. Be careful not to pierce the sides or bottom. Set the hollowed-out tomatoes aside and reserve the pulp in a small bowl.

Step 3

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the reserved tomato pulp to the skillet. Cook for 2–3 minutes, stirring occasionally, until slightly reduced.

Step 5

Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, parsley, basil, salt, and black pepper until well combined.

Step 6

Drizzle the remaining tablespoon of olive oil inside the hollowed-out tomatoes. Sprinkle a pinch of salt inside each tomato for added flavor.

Stuff each tomato with the breadcrumb mixture, packing it gently to ensure it is full. Place the stuffed tomatoes in a baking dish, open side up. Place the reserved tops on top of each tomato for presentation.

Bake in the preheated oven for 20–25 minutes, or until the tomatoes are tender and the filling is golden brown.
