  • 2 pieces Whole lobster (about 1.5 lbs each)

  • 1 cup Plain breadcrumbs
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Lemon juice, freshly squeezed
  • 2 tablespoons Dry white wine
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 tablespoon Olive oil or melted butter (optional, for brushing)
  • 4 pieces Lemon wedges

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Place each lobster on a cutting board. Using a sharp knife, split the lobster lengthwise down the middle, starting from the head and cutting through the tail. Remove the tomalley (green part) and any roe, if present. Rinse the cavity under cold water and pat the lobster dry with paper towels.

In a skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and chopped shallot, sautéing for 2-3 minutes until fragrant.

Stir in the breadcrumbs and crushed Ritz crackers, cooking for another minute to lightly toast them.
