Ingredients

  • 2 lbs Steelhead trout salmon fillet
  • 2 tbsp Olive oil

  • 1.5 cups Sweet apricots, diced
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Red onion, finely diced
  • 1 Jalapeño, finely minced
  • 2 tbsp Cilantro, chopped
  • 2 tbsp Lime juice
  • 1 tsp Honey

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Place the steelhead trout salmon fillet on the prepared baking sheet, skin-side down.

In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, 2 tablespoons of lemon juice, salt, and black pepper.
