Ingredients

  • 200 grams Glass noodles (Tanghoon)
  • 500 grams Large shrimp (head-on, shell-on)
  • 3 pieces Garlic cloves (minced)
  • 20 grams Ginger (thinly sliced)
  • 2 pieces Coriander roots
  • 1 teaspoon Black peppercorns (crushed)
  • 1 tablespoon Sesame oil
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Dark soy sauce
  • 1 cup Chicken stock
  • 1 teaspoon Sugar
  • 0.5 teaspoon White pepper powder
  • 2 stalks Spring onions (cut into 2-inch pieces)

Directions

Step 1

Soak the glass noodles in room temperature water for 10 minutes until softened, then drain and set aside.

Step 2

Clean the shrimp by removing the veins but keeping the heads and shells intact. Rinse and pat dry.

Step 3

In a small bowl, prepare the sauce by mixing together the soy sauce, oyster sauce, dark soy sauce, chicken stock, sugar, and white pepper powder. Stir until sugar dissolves and set aside.

Step 4

Heat a large skillet or wok over medium heat and add the sesame oil. Sauté the minced garlic, ginger, coriander roots, and crushed black peppercorns until fragrant (about 2 minutes).

Step 5

Add the prepared sauce to the skillet and bring it to a gentle simmer. Turn off the heat and set the skillet aside.

Step 6

In a baking dish or oven-safe clay pot, layer the soaked glass noodles at the bottom. Pour the sauce mix evenly over the noodles to ensure they're well-coated.

Step 7

Arrange the shrimp on top of the noodles, ensuring they are spread out evenly.

Step 8

Scatter the spring onion pieces around the dish for added flavor.

Step 9

Cover the baking dish with a lid or foil to seal in the steam during cooking.

Step 10

Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until the shrimp are fully cooked and pink, and the noodles absorb the flavorful sauce.

Step 11

Carefully remove from the oven and serve hot, garnished with additional spring onions or coriander if desired.
