Ingredients

  • 4 pieces (6 oz each) salmon fillet
  • 6 slices bacon
  • 2 tablespoons, chopped tarragon leaves, fresh
  • 1 whole (zested and juiced) lemon
  • 2 tablespoons olive oil
  • 2 cloves, minced garlic
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, freshly ground
  • 2 tablespoons butter
  • 2 tablespoons white wine (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with olive oil.

Step 2

In a skillet over medium heat, cook the bacon until it is crispy. Transfer the bacon to a plate lined with paper towels to drain excess grease. Once cooled, crumble the bacon into small pieces and set aside.

Step 3

In a small bowl, mix the chopped tarragon, lemon zest, lemon juice, olive oil, and minced garlic to create a flavorful marinade.

Step 4

Place the salmon fillets on the prepared baking dish, skin-side down. Sprinkle them evenly with salt and black pepper.

Step 5

Spoon the tarragon-lemon mixture over each salmon fillet, making sure it is evenly coated.

Step 6

Scatter the crumbled bacon over the top of the fillets for extra texture and flavor.

Step 7

Dot each fillet with a small amount of butter (about ½ tablespoon per fillet). If using white wine, drizzle it around the salmon in the baking dish.

Step 8

Bake the salmon in the oven for 20–25 minutes, or until the fish flakes easily with a fork and has reached an internal temperature of 145°F (63°C).

Step 9

Remove the dish from the oven and let the salmon rest for 2–3 minutes. Serve warm with your favorite side dishes, like roasted vegetables or mashed potatoes.
