Ingredients

  • 14 oz canned salmon (drained and flaked)
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tbsp dijon mustard
  • 2 tbsp mayonnaise
  • 0.5 cup finely diced onion
  • 0.5 cup finely diced red bell pepper
  • 2 cloves minced garlic
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0 olive oil spray

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or muffin tin with olive oil spray.

Step 2

In a large mixing bowl, combine the flaked salmon, breadcrumbs, and eggs. Mix thoroughly to create a base consistency.

Step 3

Add the dijon mustard, mayonnaise, diced onion, diced red bell pepper, garlic, parsley, lemon juice, paprika, salt, and black pepper. Mix until everything is evenly incorporated.

Step 4

If the mixture feels too wet, add a little more breadcrumbs. If it feels too dry, add a small spoon of mayonnaise.

Step 5

To make patties, shape the mixture into 8 equal-sized rounds, about 1/2-inch thick. Place them on the prepared baking sheet.

Step 6

Alternatively, to make muffins, scoop the mixture evenly into the muffin tin cups, filling each about 3/4 full.

Step 7

Spray the tops of the patties or muffins lightly with olive oil to help them brown.

Step 8

Bake for 20 minutes, flipping the patties halfway through. If making muffins, no flipping is necessary.

Step 9

Remove from the oven when golden and cooked through. Let cool slightly before serving.

Step 10

Serve warm with your favorite sauce or alongside a fresh green salad.
