  • 2 cups baby spinach, roughly chopped
  • 2 cups mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or nonstick cooking spray.

Bring a large pot of salted water to a boil. Cook the rigatoni pasta until al dente, as per package instructions. Drain and set aside.
