Ingredients

  • 400 grams queso fresco
  • 6 medium tomatillos
  • 1 medium jalapeño pepper
  • 2 large garlic cloves
  • 0.5 medium white onion
  • 0.5 cup fresh cilantro
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 200 grams tortilla chips or bread

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the queso fresco in a small, oven-safe baking dish and set it aside.

Step 3

Remove the husks from the tomatillos and rinse them well under warm water to remove their sticky residue.

Step 4

Cut the tomatillos in half and place them on a baking sheet along with the jalapeño, garlic cloves (unpeeled), and the onion half (cut into quarters).

Drizzle 1 tablespoon of olive oil over the vegetables and sprinkle them with a pinch of salt and black pepper.
