Ingredients

  • 400 grams raw prawns, peeled and deveined
  • 1 piece fresh red chilli, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 3 pieces spring onions, finely chopped
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 teaspoon lime zest
  • 1 tablespoon fish sauce
  • 2 tablespoons cornflour
  • 1 piece egg white
  • 4 tablespoons breadcrumbs
  • 1 as needed olive oil spray
  • 1 for garnish lime wedges

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking tray with parchment paper.

Step 2

In a food processor, add the raw prawns, chilli, ginger, garlic, spring onions, coriander leaves, lime zest, fish sauce, cornflour, and egg white.

Step 3

Pulse the ingredients until a coarse paste is formed. Avoid over-processing; you want the mixture to still have some texture.

With wet hands, shape the mixture into small, flat cakes—about 8 to 10 cakes in total.

Pour the breadcrumbs into a shallow dish, then press each prawn cake lightly into the breadcrumbs to coat evenly on both sides.
