Ingredients

  • 4 large Russet potatoes
  • 2 medium Yellow onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Sour cream
  • 2 tablespoons Fresh chives (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the russet potatoes clean under running water and pat them dry. Prick each potato several times with a fork to allow steam to escape during baking.

Step 3

Place the potatoes directly on the middle oven rack and bake for 50-60 minutes, or until they are tender when pierced with a fork.

While the potatoes are baking, peel and thinly slice the yellow onions.

Step 5

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions along with a pinch of salt and sauté for about 20-25 minutes, stirring occasionally, until the onions are soft and golden brown.
