  • 3 stalks Scallions (chopped)

  • 1 cup Cheddar cheese (shredded)
  • 0.5 cup Sour cream
  • 1 piece Jalapeño (seeded and finely chopped)
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Chili powder
  • 2 tablespoons Cilantro (chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean under running water and pat them dry with a towel.

Step 3

Pierce each potato several times with a fork to create small holes for steam to escape.

Rub the potatoes with olive oil and sprinkle them evenly with salt and black pepper.

Place the potatoes directly on the middle rack of the oven and bake for 60 minutes or until they are tender when pierced with a knife or fork.
