Ingredients

  • 4 pieces Mako shark fillets
  • 4 medium Russet potatoes
  • 4 tablespoons Olive oil
  • 2 whole Lemon
  • 4 cloves Garlic cloves
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the russet potatoes thoroughly, slice them into 1/4-inch thick rounds, and place them in a large bowl.

Step 3

Drizzle 2 tablespoons of olive oil over the potatoes, then season them with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of paprika. Toss to coat evenly.

Step 4

Spread the seasoned potatoes in a single layer on a greased baking dish or sheet pan, and bake in the preheated oven for 15 minutes.

Step 5

While the potatoes are baking, rinse the mako shark fillets under cold water and pat them dry with paper towels.

Step 6

In a small bowl, mix together 2 tablespoons of olive oil, the juice of 1 lemon, minced garlic cloves, dried oregano, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.

Step 7

Remove the potatoes from the oven and push them to the sides of the dish to create space in the middle.

Step 8

Place the mako shark fillets in the center of the dish, then brush the fillets generously with the prepared olive oil and garlic mixture.

Step 9

Slice the remaining lemon into thin rounds and lay them over the fillets for added flavor and moisture.

Step 10

Return the dish to the oven and bake for another 15 minutes, or until the shark fillets are fully cooked and flake easily with a fork.

Step 11

Remove the dish from the oven and garnish with finely chopped fresh parsley.

Step 12

Serve the baked mako shark fillets immediately with the roasted potatoes and a side of lemon wedges if desired.
