Ingredients

  • 4 pieces cod fillets
  • 3 tablespoons olive oil
  • 1 whole lemon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 pieces garlic cloves
  • 2 cups broccoli florets
  • 1 whole red bell pepper
  • 1 medium zucchini
  • 1 cup cherry tomatoes
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the cod fillets under cold water and pat them dry with paper towels.

Step 3

Slice the lemon in half. Juice one half and slice the other half into thin rounds.

Mince the garlic cloves and chop the fresh parsley finely.

Cut the red bell pepper into thin strips and dice the zucchini into half-moon slices.
