Ingredients

  • 2 medium aubergines (eggplants)
  • 3 tablespoons olive oil
  • 3 cloves garlic
  • 0.5 cup Parmesan cheese

  • 0.25 cup Fresh basil
  • 0.5 cup Breadcrumbs
  • 0.5 teaspoon Red chili flakes

Directions

Step 1

Preheat your oven to 400°F (200°C).

Slice the aubergines lengthwise into 1/4 inch thick slices. Lay the slices on a baking sheet lined with parchment paper.

Brush both sides of each aubergine slice with olive oil. Sprinkle lightly with salt and pepper to taste.
