Ingredients

  • 2 whole bagels
  • 2 large eggs
  • 4 slices bacon
  • 2 slices cheddar cheese
  • 2 tablespoons butter
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 sliced tomato
  • 1 sliced avocado

Directions

Step 1

Begin by slicing the bagels in half, and set them aside.

Step 2

Place the bacon slices in a non-stick skillet over medium heat. Cook until crispy, about 4-5 minutes, turning occasionally. Remove bacon from the skillet and place on a paper towel-lined plate to drain excess fat.

Step 3

While the bacon cooks, slice the tomato and avocado. Set aside.

Step 4

Drain the excess bacon fat from the skillet, leaving just a small amount to cook the eggs.

Step 5

Crack the eggs into the skillet and cook over medium heat. Season with salt and black pepper. Cook until the whites are set and the yolks thicken but are not hard, about 2-3 minutes. Flip the eggs for an over-easy style if desired.

Step 6

While the eggs are cooking, toast the bagels until golden brown.

Step 7

Once toasted, butter each half of the bagels.

Step 8

Place a slice of cheddar cheese on each bottom half of the bagels. Top with the cooked egg, then add bacon slices, followed by tomato and avocado slices.

Step 9

Complete the sandwich by placing the top half of the bagel over the fillings.

Step 10

Serve immediately and enjoy your delicious breakfast bagel sandwich.
