Ingredients

  • 1.5 lbs Baby potatoes
  • 2 tsp Salt
  • 2 tbsp Unsalted butter
  • 4 oz Goat cheese
  • 3 tbsp Heavy cream
  • 2 tbsp Fresh parsley, finely chopped
  • 1 tbsp Fresh chives, finely chopped
  • 1 tbsp Fresh dill, finely chopped
  • 1 tsp Freshly ground black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Place the baby potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water and bring to a boil over medium-high heat.

Step 2

Reduce the heat to a simmer and cook the potatoes for 12-15 minutes, or until they are tender when pierced with a fork. Drain and set aside.

Step 3

In a large skillet, melt the unsalted butter over medium heat. Add the drained baby potatoes and sauté for 3-5 minutes, tossing occasionally, until lightly golden.

Step 4

In a small bowl, combine the goat cheese, heavy cream, and a pinch of salt. Stir until the mixture is smooth and creamy.

Step 5

Remove the skillet from heat and gently toss the potatoes with the goat cheese mixture until evenly coated.

Step 6

Sprinkle the fresh parsley, chives, and dill over the potatoes. Add freshly ground black pepper to taste and toss lightly to combine.

Step 7

Drizzle the olive oil over the potatoes as a finishing touch.

Step 8

Serve warm as a side dish and enjoy!
