  • 4 heads baby bok choy
  • 8 oz spaghetti noodles or rice noodles

  • 2 tbsp water
  • 0.25 tsp red pepper flakes (optional)
  • 2 stalks green onions, sliced
  • 1 tbsp sesame seeds (optional garnish)
  • 1 tbsp cooking oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or rice noodles according to the package instructions. Drain and set aside, reserving 1/4 cup of noodle cooking water.

Step 2

While the noodles cook, prepare the baby bok choy by slicing each head in half lengthwise. Rinse thoroughly to remove any dirt or grit between the layers.

Step 3

In a small bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey or maple syrup, minced garlic, grated ginger, water, and optional red pepper flakes until smooth. Adjust seasoning to taste, if necessary.
