Ingredients

  • 6 heads baby bok choy
  • 200 grams cremini mushrooms
  • 3 garlic cloves
  • 1 inch piece ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 tablespoons water or vegetable broth
  • 1 teaspoon sesame seeds
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Trim the ends of baby bok choy and separate the leaves. Rinse them thoroughly under running water to remove any grit or dirt.

Step 2

Slice the cremini mushrooms into thin slices. Peel and finely mince the garlic cloves. Grate or mince the ginger.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the minced garlic and ginger to the hot skillet, and sauté for about 30 seconds until fragrant.

Step 5

Add the sliced mushrooms to the skillet. Cook for 3-4 minutes, stirring occasionally, until they release their moisture and begin to brown.
