Ingredients

  • 2 medium Eggplants
  • 2 large Garlic cloves
  • 3 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground cumin
  • 0.25 teaspoon Smoked paprika
  • 2 tablespoons Fresh parsley
  • 1 optional, for serving Pita bread or vegetable sticks

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prick the eggplants several times with a fork to prevent them from bursting while roasting.

Place the eggplants on the prepared baking sheet and roast in the oven for 35-40 minutes, turning them halfway through, until the skin is charred and the flesh is very soft.
