Ingredients

  • 1 cup Orzo pasta
  • 1 cup White rice
  • 1 cup Cherry tomatoes
  • 1 large Cucumber
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 0.25 cup Fresh parsley
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Lemon juice
  • 1.5 tablespoons Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cup Feta cheese (optional)

Directions

Step 1

Bring a medium pot of salted water to a boil. Cook the orzo pasta according to the package instructions until al dente. Drain and set aside to cool slightly.

Step 2

In a separate pot, cook the white rice according to the package instructions. Fluff with a fork and let cool to room temperature.

Step 3

Wash and dice the cucumber, red bell pepper, and red onion into small, even pieces. Halve the cherry tomatoes. Finely chop the fresh parsley.
