Ingredients

  • 2 cups Basmati rice
  • 500 grams Lamb or beef cubes
  • 2 large Onions, finely chopped
  • 4 cloves Garlic cloves, minced
  • 3 medium Tomatoes, pureed
  • 2 tablespoons Tomato paste
  • 2 pieces Green chilies, slit lengthwise
  • 2 tablespoons Bahraini baharat spice mix
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Ground cinnamon
  • 4 pods Cardamom pods
  • 4 pieces Cloves
  • 2 leaves Bay leaves
  • 1 stick Cinnamon stick
  • 3 tablespoons Vegetable oil
  • 2 tablespoons Fresh coriander (cilantro), chopped
  • 1 to taste Salt
  • 4 cups Water

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Soak it in cold water for 30 minutes, then drain and set aside.

Step 2

Heat vegetable oil in a large pot over medium heat. Add cardamom pods, cloves, bay leaves, and the cinnamon stick. Saute for 1-2 minutes until fragrant.

Step 3

Add the chopped onions and cook until they are golden brown, stirring occasionally, about 8-10 minutes.

Step 4

Stir in the minced garlic and cook for another minute. Then, add the lamb or beef cubes. Cook, stirring occasionally, until the meat is browned on all sides, about 5-7 minutes.

Add the Bahraini baharat spice mix, turmeric powder, and ground cinnamon. Mix well to coat the meat in the spices.

Stir in the pureed tomatoes, tomato paste, and slit green chilies. Cook for 5 minutes until the mixture thickens and the oil begins to separate from the sauce.

Pour in 3 cups of water and bring the mixture to a boil. Reduce the heat to low and cover the pot with a lid. Simmer for 45-60 minutes, or until the meat is tender.

In a separate pot, bring 4 cups of water to a boil with a pinch of salt. Add the soaked and drained basmati rice. Cook for 6-8 minutes until the rice is partially cooked, then drain the water.

Layer the partially cooked rice over the meat mixture in the first pot. Sprinkle the chopped coriander over the rice.

Step 10

Cover the pot with a tight-fitting lid and cook on low heat for 25-30 minutes, allowing the rice to steam and absorb the flavors.
