  • 4 pieces Fresh corn on the cob, husks intact
  • 85 grams Unsalted butter, softened
  • 1 teaspoon Lime zest
  • 1 tablespoon Lime juice
  • 1 teaspoon Chilli powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cilantro, chopped (for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Preheat your BBQ grill to medium-high heat.

Step 2

Carefully peel back the husks of the corn without removing them. Remove the silk from each cob and then fold the husks back over the corn.

Step 3

Soak the corn in a large bowl of cold water for 10 minutes to prevent the husks from burning on the grill.

Step 4

In a small mixing bowl, combine the softened butter, lime zest, lime juice, chilli powder, garlic powder, salt, and black pepper. Mix until well incorporated, then set aside.

Remove the corn from the water and shake off any excess moisture.

Place the corn on the grill. Cook, turning every few minutes, until the husks are lightly charred and the corn is tender, about 12–15 minutes.

Carefully remove the corn from the grill, allowing it to cool slightly. Peel back the husks again (or remove them completely, if desired).
