Ingredients

  • 8 pieces chicken drumsticks
  • 1 teaspoon salt
  • 1 teaspoon turmeric powder
  • 4 tablespoons vegetable oil
  • 2 medium onions, chopped
  • 4 cloves garlic cloves
  • 1 inch ginger
  • 3 pieces red chilies
  • 400 grams canned tomatoes
  • 200 milliliters coconut milk
  • 1 tablespoon sugar
  • 1 stalk lemongrass, bruised
  • 1 piece cinnamon stick
  • 1 piece star anise
  • 200 milliliters water
  • 2 tablespoons fresh coriander, chopped

Directions

Step 1

Season the chicken drumsticks with salt and turmeric powder. Set aside.

Step 2

In a food processor, blend the onions, garlic, ginger, and red chilies to form a smooth paste.

Step 3

Heat the vegetable oil in a large saucepan over medium heat. Add the blended paste and fry for 3-4 minutes until fragrant.

Step 4

Add the bruised lemongrass, cinnamon stick, and star anise to the pan. Stir for another minute to release the aromas.

Step 5

Add the seasoned chicken drumsticks to the pan, browning them on all sides for about 5 minutes.

Pour in the canned tomatoes, coconut milk, sugar, and water. Stir to combine and bring to a simmer.
