Ingredients

  • 6 pieces chicken drumsticks
  • 1 teaspoon salt
  • 1 teaspoon turmeric powder
  • 3 tablespoons vegetable oil
  • 1 large, sliced onion
  • 4 minced garlic cloves
  • 1 inch, minced ginger
  • 2 sliced red chili
  • 3 tablespoons dark soy sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 cup water
  • 1 tablespoon sugar
  • 1 large, cut into wedges tomato
  • 2 stalks, chopped spring onions

Directions

Step 1

Marinate the chicken pieces with salt and turmeric powder. Let them sit for at least 15 minutes.

Step 2

Heat vegetable oil in a large pan over medium heat. Add the marinated chicken drumsticks to the pan and fry until golden brown on all sides. Remove the chicken and set aside.

Step 3

In the same pan, add sliced onions and sauté until translucent. Add minced garlic, ginger, and sliced red chili, and continue to sauté for another 2-3 minutes until fragrant.

Step 4

Stir in dark soy sauce, light soy sauce, and oyster sauce. Mix well to combine the flavors.

Step 5

Return the fried chicken to the pan and coat each piece with the soy sauce mixture.

Step 6

Add water and sugar to the pan, bring to a simmer, and cover with a lid. Let the chicken cook for about 15 minutes until the sauce thickens and the chicken is cooked through.

Step 7

Add tomato wedges and stir gently. Cook for another 3-4 minutes until the tomato softens slightly.
