Ingredients

  • 1 kg Chicken, whole or cut into pieces
  • 6 pieces Shallots
  • 4 pieces Garlic cloves
  • 3 pieces Candlenuts
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 2 tablespoons Palm sugar
  • 1 tablespoon Tamarind paste
  • 5 cm Galangal, bruised
  • 1 stalk Lemongrass, bruised
  • 3 leaves Kaffir lime leaves
  • 4 tablespoons Sweet soy sauce (kecap manis)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Cooking oil
  • 500 ml Water

Directions

Step 1

In a food processor, blend shallots, garlic, candlenuts, turmeric, coriander, and palm sugar into a smooth paste.

Step 2

Heat cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant, about 5 minutes.

Step 3

Add the bruised galangal, lemongrass, kaffir lime leaves, and tamarind paste to the pan, stirring well.

Step 4

Pour in the water, then add the chicken pieces. Stir to coat the chicken evenly with the spice mixture.

Step 5

Season with salt and pepper, and pour in the sweet soy sauce. Mix everything thoroughly.
