Ingredients

  • 250 grams wheat berries
  • 100 grams rice
  • 150 grams chickpeas
  • 150 grams white beans
  • 100 grams dried apricots
  • 100 grams raisins
  • 100 grams figs
  • 400 grams sugar
  • 100 grams walnuts
  • 100 grams hazelnuts
  • 50 grams pomegranate seeds
  • 1 tablespoon orange zest
  • 1 cinnamon stick
  • 4 liters water

Directions

Step 1

Rinse wheat berries in cold water and soak them overnight.

Step 2

Rinse and soak chickpeas and white beans separately in cold water overnight.

Step 3

Drain and rinse the soaked wheat berries, chickpeas, and white beans.

Step 4

In a large pot, add the wheat berries, 3 liters of water, and the cinnamon stick. Bring to a boil, then reduce the heat and simmer for 30 minutes.

Step 5

Add the drained chickpeas and white beans to the pot and continue simmering for another 30 minutes until tender.

Step 6

Rinse the rice and add it to the pot, simmering for an additional 15 minutes.

Step 7

Chop the dried apricots and figs into small pieces.

Step 8

Add the sugar, chopped apricots, raisins, and figs to the pot.

Step 9

Simmer on low heat for about 45 minutes, stirring occasionally, until the mixture thickens and the fruits are soft.

Step 10

Add the orange zest, walnuts, and hazelnuts. Mix well.

Step 11

Remove the cinnamon stick from the pot.

Step 12

Divide the asure into serving bowls and let it cool to room temperature.

Garnish each serving with pomegranate seeds before serving. Optionally, sprinkle with more chopped nuts or cinnamon.
