  • 1 teaspoon Sugar
  • 3 tablespoons Cold water
  • 2 tablespoons Chopped scallions (optional)
  • 1 teaspoon Minced garlic (optional)
  • 1 teaspoon Sesame oil
  • 1 cup Vegetable oil (for frying)

Directions

Step 1

Clean the fish fillets under cold water and pat them dry with paper towels.

Cut the fish fillets into small pieces and place them in a food processor.

Add the cornstarch, egg white, salt, white pepper, and sugar to the food processor.

Pulse the mixture until it becomes a smooth paste, slowly adding the cold water to achieve a sticky but firm texture.
