Ingredients

  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 2 large Carrots
  • 2 Celery stalks
  • 3 Garlic cloves
  • 3 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 4 cups Chicken or vegetable stock
  • 1 cup Whole milk
  • 0.5 cup Heavy cream
  • 1.5 cups Cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley
  • 4 slices Bacon (optional, cooked and crumbled)

Directions

Step 1

Peel and dice the russet potatoes into small cubes. Finely chop the onion, carrots, celery, and garlic.

Step 2

In a large pot or Dutch oven, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté for 5-6 minutes until softened and fragrant.

Step 3

Stir in the garlic and cook for an additional 1 minute.

Step 4

Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to create a roux.

Step 5

Gradually pour in the chicken or vegetable stock while stirring to avoid lumps. Bring the mixture to a boil, then reduce to a simmer.

Step 6

Add the diced potatoes, salt, and pepper to the pot and let simmer for 15-20 minutes, or until the potatoes are tender.

Step 7

Using an immersion blender, partially blend the soup to create a creamy texture while leaving some potato chunks. Alternatively, transfer half the soup to a blender, puree, and return it to the pot.

Step 8

Stir in the milk, heavy cream, and cheddar cheese until the cheese is fully melted and the soup is creamy.

Step 9

Taste and adjust seasoning, adding more salt and pepper if needed.

Step 10

Serve hot, garnished with fresh parsley, and optionally topped with crumbled bacon and extra shredded cheddar cheese.
