Ingredients

  • 2 cups Fresh broccoli florets
  • 1 cup Baby carrots
  • 1 medium Zucchini
  • 1 medium Yellow squash
  • 1.5 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 cup Water

Directions

Step 1

Wash and prepare the vegetables. Cut the broccoli into bite-sized florets. Slice the baby carrots in half lengthwise. Slice the zucchini and yellow squash into thin rounds, about 1/4 inch thick.

Step 2

In a large skillet or sauté pan, heat the olive oil over medium heat.

Step 3

Once the oil is hot, add the broccoli florets and baby carrots to the pan. Cook for 4 minutes, stirring occasionally, until they begin to soften.

Step 4

Add the sliced zucchini and yellow squash to the pan. Stir to combine with the broccoli and carrots.

Step 5

Sprinkle the garlic powder, Italian seasoning, salt, and black pepper evenly over the vegetables. Stir to coat the vegetables in the seasoning.

Step 6

Pour the water into the pan and cover it with a lid. Allow the vegetables to steam for 3-4 minutes, or until they are tender-crisp.

Step 7

Remove the lid and increase the heat to medium-high to cook off any remaining water, stirring the vegetables occasionally for about 1-2 minutes.

Step 8

Taste and adjust the seasoning if needed. Serve immediately as a side dish to your favorite entrée.
