  • 0.5 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 0.5 cups Milk

  • 2 tablespoons All-purpose flour (for streusel)
  • 2 tablespoons Rolled oats
  • 0.5 teaspoons Ground cinnamon (for streusel)
  • 2 tablespoons Butter, cold and cubed

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, whisk together 1.5 cups of all-purpose flour, 0.5 cups of granulated sugar, 2 teaspoons of baking powder, 1 teaspoon of ground cinnamon, and 0.25 teaspoons of salt.

Step 3

In another bowl, mix together 0.5 cups of milk, 0.25 cups of melted butter, 1 egg, and 1 teaspoon of vanilla extract.

Step 4

Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Step 5

Fold in 1 cup of peeled and diced apple until evenly distributed in the batter.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

To make the streusel topping, combine 0.25 cups of brown sugar, 2 tablespoons of all-purpose flour, 2 tablespoons of rolled oats, and 0.5 teaspoons of ground cinnamon in a small bowl.

Step 8

Using a fork or your fingers, cut in 2 tablespoons of cold, cubed butter until the mixture resembles coarse crumbs.

Step 9

Sprinkle the streusel topping evenly over the muffins.

Step 10

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 11

Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Step 12

Serve warm or at room temperature and enjoy!
