Ingredients

  • 1.5 cups All-purpose flour
  • 3.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 1 tablespoon Granulated sugar
  • 1.25 cups Milk
  • 1 Egg
  • 3 tablespoons Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0 Non-stick cooking spray or butter (for the pan)

Directions

Step 1

In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

Step 2

In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

Step 4

Heat a non-stick skillet or griddle over medium heat and lightly grease it with non-stick cooking spray or a small pat of butter.

Step 5

Scoop about 1/4 cup of pancake batter onto the skillet for each pancake. Use the back of a spoon to spread it into a circle if needed.

Step 6

Cook the pancakes for 2-3 minutes, or until bubbles start to form on the surface and the edges look set. Flip the pancakes and cook for another 2-3 minutes, or until golden brown on the other side.

Step 7

Transfer the cooked pancakes to a plate and repeat with the remaining batter, greasing the skillet as necessary.

Step 8

Serve warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
